    Simple Squash Salad

     ~The wonders of the Lord~
    I woke up to the wonders of nature.  I took a cup of coffee outside with me this morning and spotted a beautiful spider web.  Yes, beautiful.  It shimmered in the morning sun and I marveled at the perfection this tiny creature created. Thoughts ran through my mind as I gazed upon this creation. The circumference was perfection and each strand that was woven was perfection and to top it this entire spider did this work of art literally over night and I thought, "Beautiful". I then began to wonder if things would turn out as beautiful if I followed my own instincts.

    For the Salad:
    3 cups diced zucchini or grey squash
    3 cloves garlic - chopped
    1 bell pepper - diced
    ¼ cup fresh parsley - chopped
    ½ onion - sliced thin
    1 tablespoon - capers plus 2 tablespoons caper juice
    3 - 4 slices of lemon with peel - cut in half
    For the Dressing:
    ¾ cup of vinegar
    1 tsp. salt
    ¼ tsp. black pepper
    ¼ tsp. red pepper flakes
    ½ tsp. garlic powder
    1 tsp. ground oregano
    1 tablespoon sugar

    Combine all of the ingredients the salad ingredients in a bowl.
    Combine all of the dressing ingredients in a cup and stir, adjust the ingredients to taste.  Pour this over the salad and toss.  Let the salad sit in the refrigerator for a few hour before serving.

      I like your food colourful meales but I have Celiac so alott you show. I cannot tolerate to eat but they do look yummie.

      Yes the spider web is amazing as it glitters. I have a pictures I had taken so I know what you mean.

      Bettering my photography skills has made me really appreciate little aspects of nature like spiderwebs in a way that I never did before.

      This sounds like such a refreshing warm weather dish.
