It has been a long time since I have whipped up some hummus. The menu for the winter months was very predictable. Usually it consisted of Chinese take-out or pizza, since Hurricane made sure to “wash” my kitchen away, among other things. Granted, this does bring out the “kid” in you, but after months of eating like this, it looses its appeal.
I now have my kitchen and it is like a little girl with a new toy. I love my kitchen and I am handling it with care and gentleness. Yet, in the back of my mind remains the coming of fall, hurricane season. This lets me remember that all is temporary in this life and to enjoy the day that He has given me, since only He knows what tomorrow will bring.
I was thinking I would like something a little “exotic” something with a kick, something to bring your senses to a far away place. I give you; drum roll…..a kind of - Hummus!
Ingredients:
15 ½ oz. can of butter beans – drained
¼ of a fresh lemon – with skin
5 cloves of garlic
¼ tsp. red pepper flakes
¼ tsp. black pepper flakes
¼ tsp. salt
¼ tsp. garlic powder
6 ½ oz. jar of marinated artichoke hearts – with the marinade
½ cup of fresh Italian parsley
3 tablespoons of olive oil
3 cups of uncooked rice
Prepare the rice as directed or in a rice cooker
In a food processor combine the drained butter beans, fresh lemon, garlic, seasonings, parsley, artichoke hearts with the marinade and the olive oil.
Process this with a few good chops.
Plate the rice and spoon this mixture over the rice. Garnish with lemon and parsley.

Not only is this an interesting hummus recipe, but I've never considered putting it over rice. I'll have to give it a try. I'm glad you're enjoying your kitchen again. Since Sandy was a "once every 100 years" type of hurricane, chances are you will be fine for another 100 years!
