    ~ Baked Steak Fries with Melted Cheese and Cilantro Dipping Sauce ~

    Ingredients:
    5 lb. bag of potatoes - peeled and sliced in wedges
    8 oz. of Monterey Jack or Cheddar cheese - grated
    Pat dry the potatoes and place in a bowl.
    Rub for Fries:
    ½ tsp. ground cumin
     ½ tsp. black pepper
    ½ tsp. brown sugar
    ½ tsp. garlic powder
    ½ tsp. ground curry powder
    ¼ tsp. chili powder
    ¼ tsp. salt
    Olive oil to make a paste
    Preheat Oven 350 degrees:
    Combine all of the spices in a small bowl and drizzle olive oil to make a paste from the rub.
    Place the rub in with the potatoes and toss the potatoes so each potato wedge is coated.
    Drizzle a baking pan with olive oil and place the potatoes in the pan.
    Bake 40-45 minutes until the potatoes are golden.
    Remove the potatoes to a platter and scatter the grated cheese on the potatoes while they are hot.
      
    ~ Cilantro Dipping Sauce ~
    Ingredients:
    1 bunch of fresh cilantro
    5 cloves of garlic
    2 vine ripe tomatoes
    2 tablespoons of balsamic vinegar
    1 tsp. of sugar
    ¼ tsp. salt
    ¼ tsp. black pepper
    Combine all of the above ingredients in a food processor and give a few good chops.
    Serve on the side with the potato wedges to dip.
    This is a fun side dish.

      The rub alone for the fries is so outstanding and combine with the dipping sauce... these are really over the top fries. I will be pinning this. Thank you for sharing this recipe on foodie friday.

      The wedges sound great Catherine but i think for that little added extra i would leave the skins on. Not sure on the sauce though...I've never had 'cilantro'. Maybe I should see if I can grow it next year!
