This is a hearty meal and may be served with rice or noodles.
Days like these are what Spring is all about.
Warm enough to sit outside as the sun slowly sinks down behind the trees…the last of it’s rays streaming in through the porch.
I love spending these evenings with the ones I love, sharing a laugh or a story over a meal like this.

Ingredients
- 5 - Boneless pork chops (about 1 inch thickness)
- Dashes of salt
- Dashes of black pepper
- Drizzle of olive oil
- 28 oz. can crushed tomatoes
- 5 cloves garlic
- 1 large onion – sliced
- 2 cups frozen peas
- Dashes of salt
- Dashes of black pepper
- Dashes of ground oregano
- Dashes of garlic powder
- Pinch of sugar
- Dashes of chili powder
- Healthy handful of fresh basil – chopped
- 2 stalks celery – chopped
- 1 1/2 cups fresh bread crumbs
- Grated Romano or Parmesan cheese
- Olive oil for drizzling
Instructions
- Preheat Oven 350 degrees.
- Drizzle a little olive oil in a baking pan. Place the pork chops in the pan and season with salt and pepper and another drizzle of olive oil.
- Top with the sliced onions, chopped garlic, fresh basil, celery and the crushed tomatoes. Add the seasonings and peas and top with the fresh bread crumbs.
- Drizzle a little olive oil over this and top and finish with the grated cheese.
- Place in the oven for 50-55 minutes, depending on the thickness of the pork chops you are using.
