    Stay-Home Take Out Night Dinner

    Ingredients:
    ½ head of cabbage - sliced thin
    3 bunches of scallions - sliced
    2 carrots - grated
    4 cloves of garlic - chopped
    1 bunch of Italian parsley - chopped
    4 stalks of celery - chopped
    ½ jalapeño - chopped
    1 inch piece of fresh ginger - grated
    Drizzle of sesame oil
    Drizzle of olive oil
    1 lb. of your favorite noodles
    Sauce:
    1 teaspoon of Hoisin Sauce
    ¾ tsp. Ground Fresh Chili Paste
    2 teaspoons Apricot preserves
    2 tablespoons Teriyaki Sauce
    2 teaspoons Soy Sauce
    1 tablespoon Fish Sauce
    1 teaspoon Sesame Oil
    1 teaspoon Fish Sauce
    1 teaspoon Lime Juice
    Heat a large frying pan with a drizzle of olive oil and a drizzle of sesame oil.  Add the vegetables to cook down slightly.  Do not overcook your vegetables.
    Prepare the noodles as directed and drain.  Place in a serving bowl and top with the sautéed vegetables.
    Combine all of the ingredients for the sauce in a small bowl and toss in the noodles and vegetables.
    This is a healthy and fun meal.

      Catherine, I prefer meat with my meals...just a bit of a carnivore. However, my wife is always looking for meatless recipes for 'alternative' meals. She likes to serve at least 1 dinner per week sans meat. Thanks for the recipe! Take Care, Big Daddy Dave
