For cookies you will need:
½ cup dark brown sugar
¼ cup white sugar
½ confectioner’s sugar
2¾ cups AP flour
1 teaspoons cornstarch
½ teaspoon baking powder
½ teaspoon baking soda
6 tablespoons unsalted butter
½ cup vegetable shortening
1 egg, beaten
1 teaspoon vanilla
1 tablespoon orange zest
¼ cup fresh orange juice
1 cup dark chocolate chunks
½ cup chopped walnuts
Pre-heat oven to 350 degrees F. and line cookie sheets with parchment paper.
In a large bowl, sift together sugars, flour and cornstarch. Set aside.
In the bowl of your stand mixer beat together butter, shortening, egg, vanilla, orange zest and fresh orange juice. Beat until mixture is well incorporated. Gradually add the dry ingredients in with the wet ingredients, until a nice soft dough forms. Add chocolate chunks and walnuts.
Shape cookie dough using a tablespoon and make sure to flatten each cookie slightly when placing on cookie sheets. Bake for approximately 10 minutes. Remove cookies immediately onto a cooling rack. Enjoy!
