~ No Crust! - Quick and Easy Spinach Quiche ~

Written by Living the Gourmet, a trusted food and lifestyle site since 2008.

    Ingredients:

    3 eggs
     ¼ cup grated Parmesan cheese
1 cup Monterey Jack cheese - grated
    1½ cups milk
    ¼ teaspoon salt
    ¼ teaspoon black pepper
    ¼ teaspoon chili powder
    Dash of nutmeg
9 oz. package of frozen chopped spinach
    1 tbs. butter
    Preheat Oven 350 degrees:
    Butter a pie plate.
Heat a frying pan with a tablespoon of butter.  Place the frozen spinach in the pan to defrost.
In a mix-master combine the eggs, milk and seasonings.
Place the defrosted spinach in the bottom of the pie plate.  Top with the cheeses and pour the egg/milk mixture over the spinach and cheese.
Bake 35-40 minutes or until the top is golden and the center is firm.
This is a wonderful lunch or light dinner.
    Enjoy with Love,
    Catherine

Love this, especially for low-carb eaters! How perfectly easy to make a quiche without the crust. It would be good with other greens, too, don't you think? We're going to feature this on our Facebook page and link here so people can see how you made it. If you wish, come LIKE us on Facebook for more recipes and tips on greens like kale, chard, beet, mustard, turnip, collard, escarole, dandelion and other green leafies. https://www.facebook.com/Cut.n.Clean.Greens

Just wanted to let you know I have been trying to come by and return the drops. However, something I have noticed with quite a few blogs lately, they get hung up trying to load the google+ app. I'm on FF browser - maybe they're not compatible. Yours isn't the only one I'm having trouble getting to load. Your main page loads - but your sidebars don't.

This looks scrumptious, Catherine. Love spinach prepared at any form.

I love quiche. Even if I like crust, these are so fast on the table, it's perfect for a week day. Love yours!
