    ~ Baked Chicken ~

    Ingredients:
    1 whole chicken
    1 bunch of Italian parsley - chopped
    4 cloves of garlic - chopped
    ½ cup of grated Romano cheese
    Juice of 1 lemon
    ¼ tsp. salt
    ¼ teaspoon black pepper
    Olive oil
    Rub for the chicken skin:
    ¼ tsp. salt
    ¼ tsp. black pepper
    ¼ tsp. garlic powder
    Olive oil - for drizzling
    Preheat Oven 350 degrees:
    Clean chicken inside and out and pat dry.
    Combine the ingredients for the rub in a small dish and set aside.
    In a small bowl combine the parsley, garlic, Romano cheese, lemon juice, salt and pepper.  Drizzle a little olive oil over the mixture.  Gently lift the skin of the chicken and stuff the mixture under the skin.
    Rub the chicken skin all over with the rub.
    Bake 55-60 minutes depending on the size of the chicken you are baking.

    There really is nothing like a good baked chicken.

    ~ Baked Carrot Sticks ~

    Ingredients:
    15 whole carrots cleaned
    1 tablespoon of brown sugar
    1 tablespoon of vinegar
    ¼ tsp. salt
    ½ tsp. Chili powder
    ¼ tsp. black pepper
    ¼ tsp. garlic powder
    1 tablespoon olive oil
    Preheat Oven 350 degrees:
    In a small bowl combine the brown sugar, vinegar, salt Chili powder, black pepper, garlic powder and olive oil and make a paste.
    Smooth this paste on each carrot and place the carrots on a baking pan.
    Bake 35-40 minutes until the carrots are tender.
    This is a nice change from the traditional way to serve carrots as a side dish.
    ~ Baked Potato Wedges ~ 

    Ingredients:
    5 lb. of potatoes
    Handful of fresh basil - chopped
    Juice of 1 lemon
    1 tablespoon of vinegar
    1 tablespoon of sugar
    ½ teaspoon of salt
    ¼ tsp. red pepper flakes
    ¼ tsp. of black pepper
    ¼ cup of grated Parmesan cheese
    2 tablespoons of olive oil
    Preheat Oven 350 degrees:
    Slice potatoes into wedges.
    In a small bowl combine the basil, lemon juice, vinegar, sugar, salt, red pepper flakes, black pepper, Parmesan cheese and olive oil and stir.
    Place the potatoes in a baking pan and pour the mixture over the potatoes and toss.
    Bake 45-50 minutes until potatoes are golden and tender.
    These potato wedges are so good, they make any meal a little more fun.

    Remember, adjust the ingredients to the size chicken and amount of carrots and potato's you will be serving and to you liking.

      Sounds interesting. When I bake a chicken in the oven it's usually for a good old fashioned gravy dinner and then we call it just 'roasting'....kind of the same principle but I stuff with sage and onion and rub with just salt and pepper.
