~ Roasted Red Pepper Salad Dressing ~

Written by Living the Gourmet, a trusted food and lifestyle site since 2008.

    Ingredients:
    16 oz. sour cream
    2 tablespoons vinegar
1 tablespoon capers - plus a dash of caper marinade
     Small handful of fresh dill
    2 cloves fresh garlic
4-5 slices of sweet marinated roasted red pepper - plus a little of the marinade
3-4 tablespoons of marinated hot cherry peppers - plus a little of the marinade
    Dash of salt
    Dash of black pepper
    Dash of red pepper flakes
    2 tablespoons of honey
    Drizzle of olive oil
Combine all of the above in a food processor and process until smooth.
Place in a container and refrigerate.
You control with thickness of this dressing with the amount of liquid from the marinades.
Leaving this a little bit thicker it may be used for a dip.
    With Love,
    Catherine

I love the sound of this dressing. The capers are what helps to make it so tasty. Thanks for the recipe!

I could use this on so many things, it would make a great chicken marinade.
