Inspired by Weight Watchers Annual Recipes for Success – 2009
Ingredients:
¼ cup butter
½ cup granulated sugar
1/3 cup brown sugar
1/3 cup apricot preserves
1 teaspoon vanilla extract
1 egg
¾ cup all-purpose flour
1 cup quick-cooking oats
½ (3.4 ounce) package vanilla instant pudding mix
½ teaspoon baking soda
¼ tsp. salt
½ cup craisins
Place butter in a large bowl; beat with a mixer at medium speed until fluffy. Add sugars, beating until blended. Add apricot preserves, vanilla, and egg, beating just until blended.
Combine flour, oats, pudding mix, baking soda, salt, and craisins.
Gradually add flour mixture to butter mixture, stirring just until combined.
Drop by teaspoons on lightly buttered cookie sheets.
Bake 350 degrees for 12-14 minutes or until lightly browned. Cool; 2 minutes or until firm. Remove cookies and place on wire rack to cool.
These cookies are perfect with a cup of tea or coffee without too much guilt!

What a great recipe. It's so simple and I know it must taste great.
I like the pudding, apricot preserves, and craisins in it to add moisture and extra flavor.
Besides chocolate chip cookies, oatmeal cookies take second and this might push back my standby oatmeal for your oatmeal craisin cookies.
