Ingredients:
5 lbs. red potatoes
1 bunch fresh cilantro - chopped
2 red onions - grilled and sliced
5 cloves garlic - grilled and chopped
1 jalapeño - grilled and chopped
¼ cup Romano cheese - grated
½ tsp. ground Cumin
Dashes of sea salt
Dashes of ground black pepper
Olive oil for drizzling
Boil the potatoes until fork tender. Drain and let cool before cutting.
Heat a griddle and grill the sliced onions, garlic and jalapeño until slightly charred.
Heat a large frying pan with a drizzle of olive oil. Add the quartered potatoes, grilled jalapeño, onions, garlic and cilantro. Add the seasonings, grated Romano and toss.
This is a very easy side dish and very tasty.

mmmm sounds lovely - I adore potatoes - we have some orange and yellow sweet potatoes from our farm share, I think I'll try this using a mix of these with red potatoes too
