    What! Another Banana Cake!

    Ingredients:

    3 cups of all-purpose flour - sifted
    5 ripe medium sized bananas
    3 tsp. baking powder
    2 cups sugar - sifted
    4 eggs
    6 tablespoons unsalted butter - room temperature
    1 tsp. raspberry jam - or your favorite flavor
    1 teaspoon orange marmalade
    ½ cup sour cream
    ½ cup buttermilk
    1 tablespoon vanilla
    7 cookies - crumbled (coconut or vanilla)

    Topping:

    ½ stick butter - 5-6 tablespoons
    2 tablespoons brown sugar
    2 tablespoons flour

    Preheat Oven 350 degrees:

    Grease a bundt pan with butter.

    In a large mixing bowl combine the bananas, eggs, sour cream, buttermilk, vanilla, butter, raspberry jam and orange marmalade and mix well with an electric mixer. In a separate mixing bowl combine flour, sugar and baking powder. Combine with the wet ingredients and mix well with an electric mixer.

    Topping:

    Heat a small saucepan on low and add the butter, brown sugar and flour and combine well.

    Pour half of the butter and brown sugar on the bottom of the bundt pan. Pour half of the cake batter on top of the butter and brown sugar mixture. Pour the other half of the butter and brown sugar and then pour the rest of the cake batter.

    Crumble the cookies over the batter and bake for 45-50 minutes or until the toothpick test comes out clean.

    This cake is a great way to use up the ripe bananas! It goes great with a cup of coffee or tea.

      Catherine, It's just too bad that my wife doesn't bake... On the other hand, it's a good thing that my wife doesn't bake! Sweets and bread would really max my already ample girth... As for my cooking skills, I'm just in to eating good food...I'm good for breakfast preparation only. Beautiful Banana Cake! Take Care, Big Daddy Dave
