Warm Macaroni and Barley Salad

1 box of your favorite macaroni
3 stalks of celery with leaves - chopped
1 sweet onion - chopped
1 bunch of scallions - chopped
6 cloves of garlic - chopped
½ cup combination of dried cranberries and raisins
1 large bunch of Italian parsley - chopped
Dashes of fresh ground black pepper
Dash of sea salt
One pouch of instant barley
Olive oil - for drizzling

Dressing:

Zest of 1 lemon
Zest of 1 lemon
Juice of 2 lemons
3 tablespoons of honey
½ cup of olive oil

Cook macaroni as directed drain and set aside.

Prepare the barley as directed, drain and set aside.

In a large frying pan drizzle a little olive oil and heat. Add the onion, parsley, garlic and scallions. Sauté until the onion is clear. Add the macaroni, barley and raisin cranberry combo to the pan and toss.

In a small bowl combine the ingredients for the dressing, add to the pan and toss.

This is great served warm or cold.
