Ingredients:
1 box of your favorite spaghetti
1 bunch of scallions - cut in medium pieces
4 cloves of garlic - chopped
1 quart of button mushrooms - sliced
1 bunch of Italian parsley - chopped
Olive oil
Sauce:
3 cloves of garlic - chopped
4 pats of butter
½ cup of milk
½ cup of grated Romano cheese
Dashes of fresh ground black pepper
Heat the griddle and place mushrooms, scallions, parsley and garlic on the griddle with a drizzle of olive oil. Grill until they are golden.
While the veggies are grilling prepare the spaghetti as directed. Place the spagheti in a large bowl and top with the grilled veggies and a drizzle of olive oil and toss.
In a small saucepan place the butter to melt along with the garlic. When the butter is melted add the milk and the Romano cheese and the dashes of black pepper.
Top the spaghetti with the sauce, pour another drizzle of olive oil, a few more dashes of black pepper and a little more grated cheese, toss and serve.
This will serve 5-6 people or just have some delicious leftovers.
This dish is easy, delicious and looks beautiful.
Enjoy with Much Love,
Catherine

Very nice idea! We love scallions and this is a fresh take on Alfredo sauce! Great that you and Tammy are blogging together!

Nice, simple pasta dish that is definitely healthier than real alfredo, but with great flavor from the mushrooms and scallions 🙂

This looks like an incredibly flavorful dish. I'm a big fan of scallions and mushrooms and have a feeling that even though it would feed 5-6 normally, in our house that number would be reduced to 3-5. Thank you for sharing!

Like the scallion and mushroom combination Catherine. Very flavorful pair for alfredo.

Oh, how I love alfredo sauce Catherine! You've done wonderful things with it here - you've added some oomph to it!

Scallions are not something I would have thought to put in alfredo sauce but it seems like the oniony flavor really works!
