This is a quintessential dessert cookie for all seasons. Combing the tastes of citrus with a hint of cloves and the crowd-pleasing brownie texture, this cookie will go excellent with either coffee or ice cream.
3 cups flour
½ stick butter (softened)
1 cup chocolate chips
1 cup chopped walnuts
4 pieces Bakers Semi Sweet Chocolate
1 cup sugar
¾ cup dark brown sugar
1 teaspoon rum extract
zest of 1 orange
¼ teaspoon ground cloves
1 egg
¼ cup Butter Milk
¼ cup fresh orange juice
¼ cup left over coffee
1 teaspoon baking soda
1 teaspoon vanilla extract
Preheat oven 350 degrees
Combine dry ingredients - flour, sugar, brown sugar, and baking soda in large bowl and mix
Melt Bakers chocolate in double boiler.
In food processor, combine chocolate chips, orange zest, ground cloves, and walnuts, chop until coarse, not fine. Combine with dry ingredients.
Combine egg, buttermilk, butter, orange juice, coffee, melted chocolate, rum extract, vanilla extract, mix together with hand mixer.
Form into ball, pat with flour, wrap in kitchen towel, and place in refrigerator for a few hours.
Take out of refrigerator. Place on floured counter. Cut dough into four pieces. Roll out individual pieces, not too thin. Cut into cookies with top of Mayonnaise cap (30oz.). ( It makes the perfect size cookie.) Dip cookie in white sugar.
Place on non-stick cookie sheet.
Bake for about 8-10 minutes….do not overcook …cookie will get very hard. Take out of oven, when cookies are cooled, dust with powedered sugar.
Great with vanilla ice cream!
