With the balmy summer months dwindling to their final days, parents and children alike are preparing for the inevitable return of wintery school nights. However, newly packed schedules aren’t the only obstacle making a return with ‘Old Man Winter.’ With homework and work nights colliding, families need to have recipes at the ready that not only can sooth the soul and rejuvenate the body after a long day at school, but that are also budget-friendly.
To help solve precisely that quandary, Living the Gourmet is pleased to be teaming up with Campbell’s to reinvent SpaghettiOs® in this quick and easy mac and cheese dish, by kicking it up with PACE® salsa, then layering it with thick slices of Italian bread. Lightly baked with extra cheese.
The inspiration behind this dish was one of my own childhood favorites, a case study in comfort food, mac and cheese, a dish that is equal part ease, taste, and affordability.
So, while making a quick run to my local Walmart, I picked up SpaghettiOs®, PACE® Salsa, and Swanson® Chicken Broth – all for an unbeatable price. After arriving back home, I decided to start right then and there on my mac and cheese lasagna, determined to prove that I could whip it up in a pinch.
To start things off, I began with my cheese sauce, using Swanson® Chicken Broth as a base, and then began prepping the SpaghettiOs®.
In a large saucepan, I heated the SpaghettiOs® with a cup of PACE® Salsa, which gave the SpaghettiOs® a nice southwest flare.
Once the SpaghettiOs® and salsa came to a gentle simmer, I added the cream sauce.
While I used leftover ciabatta bread to form the layers, you may use any bread on hand. Between each layer of bread, I ladled the SpaghettiOs® with extra grated Parmesan cheese and fresh basil from the garden.
Bake for 20-25 minutes just until the top is nice and bubbly.
It doesn’t get much easier than this. It’s a three step meal that is full of flavor! It is not only ideal for busy weeknights, but it is a delicious treat for the weekends and for company.

- Total Time: 30 minutes
Ingredients
- 2 cups cheddar cheese - shredded
- 1 cup Pace Salsa
- 2 cans Spaghetti O’s - 22.4 oz. cans
- 1/4 cup flour
- 4 tbs. butter
- 1 cup Swanson's Chicken Broth
- Ciabatta bread - sliced thin
- 1 cup of fresh basil leaves
- Grated Parmesan cheese
- Olive oil - for drizzling
Instructions
- In a saucepan heat one cup of Swanson's Chicken broth; whisking add the butter. When the butter is melted; continuing to whisk add the flour, then the shredded cheese. Whisk until the combination is smooth and creamy.
- In another saucepan, on a gentle heat, combine the SpaghettiO’s and one cup of Pace Salsa. Add the cheese sauce to the SpaghettiO’s and stir.
- Preheat Oven 350 degrees F.
- Butter a baking dish.
- Place a layer of Ciabatta bread followed by SpaghettiO’s, shredded cheddar cheese, fresh basil leaves and grated Parmesan cheese.
- Repeat this layering until the SpaghettiO’s are used up; finishing with the shredded cheese, grated Parmesan cheese and a drizzle of olive oil.
- Bake for 20 – 25 minutes.
- Prep Time: 10 minutes
- Cook Time: 20 minutes
