Summer season, for all its ‘lazy days,’ is more often than not an exercise in ‘relaxed chaos.’ The warm weather brings with it poolside lounging and easy meals prepared over an open grill, but as the saying goes, it takes hard work and planning to find time to relax. That has hardly ever been truer, as the season so far has been a busy one where I am, and where I am, the season has not even started.
Between juggling family get-togethers, hosting friends for semi-formal luncheons, and partaking of local kayaking events, relaxed summer chaos has been the pleasant order of the day – all while polishing my grill techniques; still thoroughly rusted by winter.
Through all of it, how are those of us more likely to be the host rather than the hosted supposed to indulge in our own bit of warm weather lounging?
With invisible shortcuts, of course.
Allow me to elaborate. Over the years, I’ve found that one of the most tedious tasks the season may pose is aptly balancing the adults and the children, especially when it comes to seasonal fare. How well this balancing act is performed will largely determine how successful the gathering will be.
Due to host my own family get-together, I was in the midst of plotting a balancing act of my own. During my last stop at Walmart for assorted supplies, I noticed the Kool-Aid Easy Mix display, and that’s where it clicked. In that single instant, I realized I wouldn’t have to worry about crafting separate dishes or strip down original recipes. Instead, I could craft something that the entire family would enjoy equally, albeit for very different reasons.
To begin, I wanted something that was both finger food, as well as ‘portable,’ basically something that could be carried around a yard, consumed standing up, or even packed up for a picnic or taken on a boat. I decided on oven fried chicken tenders.
To accompany the tenders, I decided to do something that was both a little different, and a whole lot of fun. After infusing sour cream with grape Kool-Aid, I then mixed in dill, fresh lemon juice, and honey. The result was a sweet but slightly tangy dipping sauce, whose unmistakable base of grape sweetness clashes with the natural tang of the sour cream, with the entire experience mellowed by the addition of honey, while the dash of dill adds a vague elegance.
PrintChicken Tenders with Grape Dipping Sauce Tropical Punch Spritzer Cherry Cream Ice Cream {No-Churn}
- Total Time: 8 minutes
Ingredients
- 2 chicken breasts, thinly sliced into tenders
- 1 1/2 cups flour - plus a dash of salt and pepper
- 1 1/2 cups milk
- 2 eggs
- 1 cup of Italian-Style Breadcrumbs mixed with 1 cup of potato flakes
Grape Dipping Sauce:
- 8 ounces sour cream
- 2 tablespoons fresh dill
- 1 1/2 tablespoon Kool-Aid Easy Mix Grape
- 1 tbs. honey
- 1 tablespoon Lemon Juice
- 1 cup club soda
- 1/8 cup Kool-Aid Easy Mix Tropical Punch
- Ice
- Lemon slices for garnish
- Orange slices for garnish
- 2 maraschino cherries, halved for garnish
- 1 tablespoon vanilla
- 1/4 teaspoon salt
- 14 oz. condensed milk
- 3 tablespoons Kool-Aid Easy Mix Cherry
- 1 cup maraschino cherries, halved
- 16 oz. whipping cream
Kool-Aid Cherry Sauce:
- 1 tablespoon cornstarch
- 1/4 cup Kool-Aid Easy Mix Cherry
- 2 tablespoons water
Instructions
- Drizzle of Canola Oil
- Preheat oven to 350 degrees F.
- Set up three shallow bowls; one mixed with flour plus salt and pepper; one with eggs and milk whisked together and finally one with breadcrumbs and potato flakes combined.
- Dredge the chicken in the flour mixture, followed by the egg wash and finally dredge in the breadcrumbs-potato flakes mixture.
- Place on a baking sheet and drizzle with the canola oil.
- Bake 30 – 35 minutes or until the juices run clear.
Grape Dipping Sauce:
- Place all of the ingredients for the dip in a food processor and blend.
- In each glass, place ice cubes, add Kool-Aid and Seltzer. Stir and garnish with cherries and citrus slices.
- In a large bowl whip the whipping cream.
- In a separate bowl whisk together vanilla, salt, Cherry Kool Aid and the condensed milk.
- Fold the whipped cream into the condensed milk mixture.
- Place into a container and place in the freezer for one hour before adding the halved cherries. Once the ice cream has chilled and thickened a little, stir in halved Maraschino cherries. Return to freezer for at least 5 – 6 hours.
Kool-Aid Cherry Sauce:
- In a small saucepan over low heat, whisk cornstarch, Kool-Aid and water until the mixture thickens into a sauce. Drizzle over ice cream before serving. Top with whipped cream and a cherry.
Notes
The cooking time for the chicken tenders will depend on how thick you cut the chicken tenders.
