I can remember the days when summers were spent outdoors. I'd lose track of time running with neighborhood friends through sprinklers and cutting across lawns to chase down the ice cream truck, while weekend afternoons were spent out fishing with my father on the Great South Bay. It feels like a lifetime ago.
Somehow along the way, between the then and now, summer lost its spark of magic for me. The unrelenting heat and humidity makes it nearly impossible to feel inspired to step outside, paired with the fact that whenever I am about to go out, the sky is overcast and the weather can be completely unpredictable. However, everything must be in equilibrium, and there are still things I still revel in- the Longer days, pink sunsets, bright early mornings, frozen ices...
Slushies bring me right back to my childhood. A cross between a frosty and a drink, it hits the spot when you're craving something light and refreshing midday.
I've been holding onto this recipe for nearly a month now, excited to share it with you. It's so simple and easy, yet one of the most satisfying recipes I've shared this summer, at least in my opinion.
I've been creating several different variations from blueberry basil, strawberry mint, to banana chocolate chip, but my favorite has been this cherry and mint concoction. It's sweet, cool, and bright. With just five ingredients you'll have a guilt-free slushy in just a few minutes to enjoy as a mid-afternoon treat or an after-dinner delight.

- Total Time: 5 minutes
- Yield: 2 slushies 1x
Ingredients
- 3 1/2 cups of pitted fresh cherries - frozen
- 2 tbs. fresh lemon juice
- 18 ice cubes
- 1/4 cup sugar
- 6 - 8 fresh mint leaves and a sprig for garnish
Instructions
- Pit the cherries then put them in a zip lock bag to freeze.
- Combine in a blender; the frozen cherries, fresh lemon juice, sugar, ice cubes and fresh mint leaves.
- Blend until a nice smooth thick slushy is achieved.
- Spoon into your favorite glass and Enjoy!!
