Ingredients:
1 ½ lbs. pork – cubed
1 onion – sliced
3 cloves of garlic – chopped
½ tsp. salt
Dashes of black pepper
½ cup grape tomatoes – processed
Dashes of dried oregano
Dashes of dried thyme
Dashes of dried rosemary
Dashes of paprika
¼ cup chicken broth
¼ cup wine
1 tablespoon butter
Olive oil for drizzling
Combine all of the seasonings in a small bowl.
Place the cubed meat in a container and pour the seasoning over the meat. Work the seasonings into the meat; cover and refrigerate for at least one hour.
Heat a large frying pan with a drizzle of olive oil and the tablespoon of butter.
Sauté the pork in the hot frying pan until it is golden on all sides – about 10 minutes.
Remove from the pan and set aside.
Add the onion and the garlic; sauté until the onion is slightly golden. Place the pork back in the pan with the onion and garlic. Add the chicken broth, wine and the tomatoes.
Simmer for about 40-45 minutes until the meat is tender.
Sour Cream Dill Dressing - for the Salad or Flat Bread:
1 cup sour cream
Handful of fresh Dill
2 celery stalks
1 tsp. of capers – plus a little caper juice
Juice of ¼ lemon
Combine all of the above ingredients in a food processor and process until smooth.
Plate on either a flat bread or lettuce leaves and spoon the sour cream sauce over the leaves.
Top with the meat and enjoy.
