Chicken Burgers with Spiced Rub
Ingredients
- 4 lbs. boneless-skinless chicken breast - cubed
For the Burgers:
- 2 - 3 tbs. sun dried tomatoes - chopped
- 2 cloves garlic - chopped
- Juice and zest of 1 lemon
- 1/4 cup cilantro - chopped
- 1 tsp. salt
- 1 tsp. black pepper
- 1/2 cup Romano or Parmesan cheese - grated
- 1 scallion - chopped
- 1 tbs. olive oil
For the Rub:
- 1 tsp. paprika
- 1 tsp. salt
- 1 tsp. black pepper
- 1 tsp. garlic powder
- 1 tsp. chili powder
- 1 tsp. ground oregano
- 1 tsp. ground cumin
Honey Mustard Dressing for the Salad Greens:
- 2 - 3 tablespoons smooth mustard - your favorite
- 2 tablespoons balsamic vinegar
- 2 - 3 tablespoons honey
- 1/4 tsp. salt
- 1/4 tsp. black pepper
Instructions
- For the Burgers & Rub: Combine all of the ingredients for the rub in a medium sized bowl and set aside.
- Place the cubed chicken a little at a time in the food processor and process to desired consistency.
- Place the ground chicken in a large bowl and add the remaining ingredients for the burgers.
- Shape the burgers into a ball and roll in the rub; then flatten the burgers to desired thickness.
- Grill burger until juices run clear. The cooking time depends on the thickness of the burger.
- Serve with your favorite lettuce, tomato and cucumber.
- Honey Mustard Dressing for the Salad Greens:Combine all of the above ingredients in a small bowl and whisk.
- Adjust the flavors for the dressing to your liking.
- Use on salad and for burger.

I love this recipe. I would only switch the cilantro with basil for my personal taste. I was just never fond of the taste of cilantro.
