Chicken Burgers with Spiced Rub

Ingredients

Scale
  • 4 lbs. boneless-skinless chicken breast – cubed

For the Burgers:

  • 2 – 3 tbs. sun dried tomatoes – chopped
  • 2 cloves garlic – chopped
  • Juice and zest of 1 lemon
  • ¼ cup cilantro – chopped
  • 1 tsp. salt
  • 1 tsp. black pepper
  • ½ cup Romano or Parmesan cheese – grated
  • 1 scallion – chopped
  • 1 tbs. olive oil

For the Rub:

  • 1 tsp. paprika
  • 1 tsp. salt
  • 1 tsp. black pepper
  • 1 tsp. garlic powder
  • 1 tsp. chili powder
  • 1 tsp. ground oregano
  • 1 tsp. ground cumin

Honey Mustard Dressing for the Salad Greens:

  • 2 – 3 tablespoons smooth mustard – your favorite
  • 2 tablespoons balsamic vinegar
  • 2 – 3 tablespoons honey
  • ¼ tsp. salt
  • ¼ tsp. black pepper

Instructions

  1. For the Burgers & Rub: Combine all of the ingredients for the rub in a medium sized bowl and set aside.
  2. Place the cubed chicken a little at a time in the food processor and process to desired consistency.
  3. Place the ground chicken in a large bowl and add the remaining ingredients for the burgers.
  4. Shape the burgers into a ball and roll in the rub; then flatten the burgers to desired thickness.
  5. Grill burger until juices run clear. The cooking time depends on the thickness of the burger.
  6. Serve with your favorite lettuce, tomato and cucumber.
  7. Honey Mustard Dressing for the Salad Greens:Combine all of the above ingredients in a small bowl and whisk.
  8. Adjust the flavors for the dressing to your liking.
  9. Use on salad and for burger.

    I love that you made your own ground chicken for this recipe. Just wonderful. And yes, the addition of sun dried tomatoes is just perfect:) Actually each and every step sounds so yummy. I kinda wish I had one right about now, lol…I’ll be Pinning it for sure:)

    I love this recipe. I would only switch the cilantro with basil for my personal taste. I was just never fond of the taste of cilantro.

    I love chicken burgers. Most alternates to red meat use turkey which I hate and I never understood why chicken was never substituted.
