    Bowties with Scallions

Written by Living the Gourmet, a trusted food and lifestyle site since 2008.

The easiest part of a day is when the coffee is brewed and the cream is poured and the first sip is taken. You wish the whole day could be the first sip. Ah, but regretfully, it cannot, so you do the next best thing you pretend each sip is the first sip of the day; until the nighttime comes and you sigh and say that wasn't so bad I made it through with the help of my imagination, a little fortitude, a little humility and a little prayer.
    Ingredients:
3 bunches of scallions - sliced
    2 bell peppers - sliced
5 cloves of garlic - sliced
1 quart of button mushrooms - sliced
1 inch piece of fresh ginger - sliced
2 stalks of celery - sliced
¼ cup of fresh basil - chopped
    2 tbs. olive oil
1 box of your favorite macaroni
    Dressing:
    Juice of 2 lemons
1 tbs. capers - chopped - plus 2 tbs. caper juice
    ¼ tsp. red pepper flakes
    ½ tsp. salt
    3 tbs. olive oil
Prepare the macaroni as directed while cooking the veggies.
Heat a large frying pan with the olive oil; add the mushrooms to sauté and become a nice golden color.  Remove the mushrooms and set aside.
In the same frying pan heat 2 tablespoons of olive oil and add the veggies.  Cook the veggies down until slightly wilted then add the mushrooms back in and toss.
Plate the macaroni; top with the sautéed veggies and stir in the dressing; toss and serve.
    And now for dessert!
Living the Gourmetis proud to present Tofutti Happy Cuties by Tofutti Brand Desserts.

These desserts are so delicious and rich you would never think they were dairy free.  To jazz it up a little, I dipped them in a crispy chocolate coating!

Whether you require a lactose-free product for allergy reasons, religious observance, or simply are on the hunt for a healthful alternative to dairy, Tofutti offers a range of great-tasting, high-quality options.
Sweetened with stevia, Hooray!  Hooray! Bars are a great tasting, milk/dairy-free, all-natural novelty dessert.  Hooray! Hooray! Bars are also Kosher Parve, and vegan.
Tofutti Cuties feature delicious milk/dairy-free Tofutti sandwiched between two wafers, and come in a variety of flavors including vanilla, chocolate, cookies 'n cream, mint chocolate chip, key lime pie, Totally Vanilla, and wild berry.  Cuties are also Kosher Parve, and vegan.
Toffuti is a brand founded on innovation.  In addition to being the first to use stevia in a frozen dessert, an all-natural, calorie-free sugar alternative, Tofutti founder David Mintz has been experimenting with tofu in place of dairy since the 1970s.  Since then, Tofuttibrand has become a leader in products devoted to the dairy-free, allergy-safe consumer, with a diverse product line ranging from pizzas and blintzes to cheeses and frozen desserts serving millions on the international market.
"We are not fake dairy, we are like dairy for millions and millions of people!" Tofutti founder David Mintz explains.  "Tofutti is their only option, a chance to eat like everyone else.  I take that very, very seriously."
