    Macaroni and Cheese

    I took my little dog for a walk and was in awe; the sky at dusk was magnificent. It was pink and orange and blue/green.  In short it was breathtaking.  I thought isn't the Dear Lord a fabulous painter! 

    As I was on my way back, I wondered about what was going to be on the menu for this Friday evening and the first thought was something that would be comforting but also fun, what would be fun to eat; macaroni and cheese! I know I just made it a week or two ago, but this time I dressed it up a bit.

    Ingredients:

    1 lb. of your favorite macaroni
    4 oz. cheddar cheese or your favorite shredded
    ½ red onion - sliced thin
    1 bell pepper - sliced thin
    3 cloves garlic - chopped
    1 small jalapeño - chopped fine (with or without seeds)
    1 tablespoon butter
    2 cups milk
    ½ tsp. salt
    ½ tsp. black pepper
    ½ tsp. ground cumin
    ½ tsp. paprika
    ¼ tsp. turmeric
    ½ tsp. powdered chicken broth (optional)
    1 tablespoon olive oil
    Grated Romano or Parmesan cheese
    Prepare macaroni as directed; drain and set aside.
    Heat a large frying pan with the olive oil.  Add the onion, garlic and peppers.  Sauté until the onion is softened and the garlic is fragrant.  Add the butter and continue to sauté on low.
    Add the milk and the seasonings and simmer on low for a few minutes.
    Add the drained macaroni and the shredded cheese and grated Romano or Parmesan cheese and toss.

      Our God is an amazing sky painter. I love taking walks or runs in the evenings. And you are an amazing cook! This looks like a delicious dressed up mac and cheese!

      I love mac and cheese and I love it made differently each time. The extra spiciness in this is appealing. Hubby asks for mac and whenever I ask him what he wants. I think he deserves this lovely dish. A wonderful week, Catherine.

      Mac and cheese is the ultimate comfort food. When the weather starts to get cooler it's perfect. So many other bloggers must feel the same way because I've seen so many posts about it, even David Leibowitz in Paris posted on it yesterday. Yours looks yummy.
