Bring out the flavors in your salad with this creamy Asian-infused Sesame Ginger Vinaigrette inspired by the delicious new line of Lorissa’s Kitchen premium protein snacks!
Tolerate my stream of consciousness for a moment. Have you ever noticed how, after inviting someone over for a ‘relaxed brunch,’ that the preparation for such a ‘brunch’ is anything but? For example, those ‘effortless finger sandwiches’ prepared without crust require the culinary equivalent of surgical precision to plate just right. And don’t get me started on how the ‘relaxed décor’ requires a strangely stressful amount of primping, or how the cleanup for a ‘casual’ gathering is often analogues to, well, any other sort of gathering.

Oddly, just before I sat down to write this, I was listening to one of my playlists, and one of the lyrics that caught my attention ran roughly, “Think back to the time when you thought everything would be easy.” I probably don’t have explain why I related in that moment.
This is perhaps why an entire industry has sprung up around the idea of ‘easy’ or ‘effortless’ cooking. However, if we’re honest, many of us are simply looking for ways to just get through the day, or ways to keep healthy despite our tight schedules, or how to fit in some much needed flavor and satisfaction into our best efforts at a healthy diet or fitness routine.
While I’ve yet to find any ‘real’ answers on how to make “effortless entertaining” anything little more than an ‘less effort-full,’ I have recently discovered one precious little gem for getting out of that midday slump, as well as a way to kick up some of my snack options – Lorissa’s Kitchen, which are available right at your local Walmart.
I’ve found that these are a great low-carb, high-protein snacks, regardless of what I’m doing, whether I’m working at my desk, on-the-go, or just finishing up a workout.
While keeping to a healthy menu throughout the week, I often like to pair these satisfying snacks alongside salads, which brings us to today’s recipe – an arugula and red cabbage salad with a fresh sesame vinaigrette, which I prefer to serve with a few hardboiled eggs for body and texture.
Once that’s done, I either plate the salad on the spot, or set it aside for tomorrow’s lunch. On a side note, the vinaigrette is also great for dipping bread, roast chicken, or pork.

- Total Time: 10 minutes

Ingredients
For the Salad:
- 2 cups Arugula Greens
- 1/4 of a Red Cabbage - sliced thin
- 1/4 of a Green Cabbage - sliced thin
- 1/4 Red Onion - sliced thin
- 1 cup Grape tomatoes - halved
- 1/4 cup Dried cranberries - chopped
- 1/4 cup Almonds - grilled and chopped
- 2 tbs. Sesame seeds
- 2 Hard boiled eggs - halved
For the Sesame Ginger Vinaigrette:
- 2 cloves of garlic - grilled
- 1 inch piece of fresh ginger - sliced
- 3 tbs. sesame seeds
- 4 tbs. Rice Wine Vinegar
- 3 tbs. soy sauce
- 1 1/2 tsp. sugar
- 2 tbs. sesame oil
- 1/4 cup vegetable oil
Instructions
For the Salad:
- Combine all of the ingredients for the salad and toss.
- Serve with the Sesame Ginger Vinaigrette salad dressing on the side.
For the Sesame Ginger Vinaigrette:
- Combine all of the ingredients for the sesame ginger vinaigrette in a food processor and process until smooth and creamy

Now, I know what you’re thinking. Most midday salads are the result of wanting to do something ‘heroic’ for one’s health or waistline, but I promise this salad is anything but, while still being healthy. The seasonal ingredients, plus the exotically pleasant flavors of the vinaigrette, are simply delicious.

I've been contemplating the notion of "effortless" cooking for some time now, Catherine. My "opinion" rests in the notion of keeping it simple and not over thinking the meal. Whether for entertaining, or every day meals, it seems fresh and simple is still the way to go. IMHO, of course:)
