Ingredients

Units Scale

For the Salad:

  • 2 cups Arugula Greens
  • 1/4 of a Red Cabbage - sliced thin
  • 1/4 of a Green Cabbage - sliced thin
  • 1/4 Red Onion - sliced thin
  • 1 cup Grape tomatoes - halved
  • 1/4 cup Dried cranberries - chopped
  • 1/4 cup Almonds - grilled and chopped
  • 2 tbs. Sesame seeds
  • 2 Hard boiled eggs - halved

For the Sesame Ginger Vinaigrette:

  • 2 cloves of garlic - grilled
  • 1 inch piece of fresh ginger - sliced
  • 3 tbs. sesame seeds
  • 4 tbs. Rice Wine Vinegar
  • 3 tbs. soy sauce
  • 1 1/2 tsp. sugar
  • 2 tbs. sesame oil
  • 1/4 cup vegetable oil

Instructions

For the Salad:

  1. Combine all of the ingredients for the salad and toss.
  2. Serve with the Sesame Ginger Vinaigrette salad dressing on the side.

For the Sesame Ginger Vinaigrette:

  1. Combine all of the ingredients for the sesame ginger vinaigrette in a food processor and process until smooth and creamy
