Buttery Irish Cream Sugar Cookies (Easy Recipe)

Ingredients

  • 1 cup butter, softened
  • 3/4 cup white sugar
  • 1 large egg
  • 2 tablespoons Irish Cream or Irish Cream syrup
  • 1 1/2 cup all purpose flour
  • 1 teaspoon baking powder
  • Pinch of salt (1/2 teaspoon)
  • Green sprinkles
  • Gold sprinkles

Instructions

  1. In a large bowl, whip butter and sugar.  Add the egg and Irish cream and mix again until well blended.
  2. Add flour, baking powder, and salt.  Mix until a soft but slightly sticky dough comes together.
  3. On a lightly floured surface, divide the dough in half and roll each into 10-inch long logs.  Roll each log into the different colored sprinkles.
  4. Wrap in cling film and refrigerate for about 20 minutes.
  5. Preheat oven to 350 degrees F. and line two baking sheets with parchment paper.
  6. In two small bowls divide the green and gold sprinkles.
  7. Slice the refrigerated log into ½ -inch slices.  If starting with the log rolled in gold sprinkles, then top each cook with the green.  Repeat this process conversely with the log rolled in green sprinkles.
  8. Place the cookies on the prepared baking sheets and bake for 10-12 minutes depending on the range of your oven.  They should be lightly golden underneath and firm to the touch when done.
  9. Transfer to a wire rack and allow them to cool before serving.  Enjoy!
