Ingredients
- 1 cup butter, softened
- 3/4 cup white sugar
- 1 large egg
- 2 tablespoons Irish Cream or Irish Cream syrup
- 1 1/2 cup all purpose flour
- 1 teaspoon baking powder
- Pinch of salt (1/2 teaspoon)
- Green sprinkles
- Gold sprinkles
Instructions
- In a large bowl, whip butter and sugar. Add the egg and Irish cream and mix again until well blended.
- Add flour, baking powder, and salt. Mix until a soft but slightly sticky dough comes together.
- On a lightly floured surface, divide the dough in half and roll each into 10-inch long logs. Roll each log into the different colored sprinkles.
- Wrap in cling film and refrigerate for about 20 minutes.
- Preheat oven to 350 degrees F. and line two baking sheets with parchment paper.
- In two small bowls divide the green and gold sprinkles.
- Slice the refrigerated log into ½ -inch slices. If starting with the log rolled in gold sprinkles, then top each cook with the green. Repeat this process conversely with the log rolled in green sprinkles.
- Place the cookies on the prepared baking sheets and bake for 10-12 minutes depending on the range of your oven. They should be lightly golden underneath and firm to the touch when done.
- Transfer to a wire rack and allow them to cool before serving. Enjoy!
