  • ½ teaspoon salt
    • Note: Fine sea salt or kosher salt works well.
  • ¼ teaspoon finely ground black pepper
    • Tip: Adjust the pepper to your taste preference. It adds a subtle warmth without being overpowering.
  • 2 teaspoons freshly grated ginger
    • Note: The use of fresh ginger is key for that vibrant, zesty flavor.
    • Substitute: Powdered or ground ginger can be used in place of fresh, though I do recommend fresh as it possesses a brighter, more herbal flavor.
  • ½ cup butter, softened
    • Note: Unsalted butter is recommended.
    • Substitute: Vegetable shortening can be used in place of butter if desired.
  • ½ cup white sugar
    • Tip: Use light or dark brown sugar for a deeper flavor.
  • 1 large egg
    • Note: Make sure the egg is at room temperature for better incorporation.
  • ½ cup dark molasses
    • Substitution: If you prefer a milder flavor, you can use light molasses.
    • Note: Recommend against using blackstrap molasses, as it might result in a more intense and bitter flavor due to its concentrated nature.
  • Raw sugar, for rolling
    • Tip: Raw sugar adds a delightful crunch to the exterior. If unavailable, granulated sugar works too.

    • This is one of my kitchen must-haves. It makes cleanup so much easier. All we're doing with the parchment paper is lining the baking sheet to prevent the cookies from sticking.
  7. Wire Rack:
    • For allowing the cookies to cool after baking.
  8. Cookie Scoop or Spoon:
    • To portion out the cookie dough to form cookie dough balls for baking.
  9. Airtight Container:
    • For storing the cookies. The cookies keep nicely for about seven days.

Ingredients

Units Scale
  • 2 cups all purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon ground cinnamon
  • 1/2 teaspoons salt
  • 1/4 teaspoon finely ground black pepper
  • 2 teaspoons freshly grated ginger
  • 1/2 cup butter, softened
  • 1/2 cup sugar
  • 1 large egg
  • 1/2 cup dark molasses
  • Raw sugar, for rolling

Instructions

  1. Preheat oven to 350 degrees F. and line a baking sheet with parchment paper.
  2. In a large bowl, whisk together flour, baking soda, cinnamon, salt and pepper.  Set aside.
  3. In a separate bowl, beat butter, sugar, ginger, egg, and molasses.  Add the dry ingredients and mix again until a smooth, sticky dough comes together.
  4. Scoop rounded tablespoons of cookie dough and roll them in raw sugar.
  5. Place the cookies on the prepared baking sheet spaced about two inches apart.  Gently press each cookie, but don't flatten completely.
  6. Bake for about 10-11 minutes until they have puffed and slightly cracked.
  7. Remove from the oven and let rest for a minute on the baking sheet before transferring to a wire rack to cool completely.  Serve and enjoy!
