Filet mignon is beloved for its unparalleled tenderness and luxurious buttery flavor. Today’s simple recipe elevates both of those qualities by wrapping the filet mignon in bacon, and then searing the steak in a mix of butter and olive oil, creating a succulent and flavorful cut of beef. The addition of rosemary and garlic help to create a tantalizingly alluring aroma.
What sets this recipe apart is its fusion of simplicity and sophistication. The recipe is blissfully simple, with all of the magic unfolding in a single cast iron pan. The super simple mix of ingredients, and straightforward prep method ensures that even a novice chef can master the art of cooking filet mignon to perfection. All we are doing is rubbing the steaks down in salt and pepper, wrapping them in bacon, and then searing on each side, followed by a brush of the delectable Andria's Brush on Steak Sauce. And that’s it.
For pairing, all of the usual steak favorites apply. Whether you opt for a robust red wine or a classic side dish such as sweet potatoes or hardy biscuits, this is a versatile dish perfect for any time of year and any occasion. This recipe is equally at home at upscale dinner parties as it is on busy weeknights courtesy of its sublime simplicity. I can easily imagine serving these steaks alongside creamy mashed potatoes, roasted vegetables, or a side of tangy blue cheese for a delicious dining experience.
We’re putting today’s recipe together with a little help from our longtime friends over at Andria’s Steakhouse, whose line of dressings and sauces are simply delicious, but more on them below.
Now, without further delay, let’s get to it, because we’ve got a lot to cover.
Why You’ll Love this Recipe
- Indulgent Flavor Fusion: The combination of filet magnon's tenderness, the savory richness of the bacon, and the herbal notes of the rosemary, combined with the garlic, creates a flavor explosion that should be irresistible if you’re a steak enthusiast like I am.
- Super Simple Preparation: This recipe comes together with just a few quality ingredients, but without skimping on flavor. That means this recipe is perfect for both seasoned home cooks and those new to the kitchen.
- Aromatics Infusion: Perhaps my favorite part of this recipe is the aroma of the rosemary and garlic cooking in the butter and olive oil. The aroma just elevates the entire experience. Add in the aroma of the cooking bacon and who could ask for anything more? Love it.
- Versatility: This recipe serves as a canvas for personalization. Readers can experiment with different herbs, spices, or steak sauces to tailor the dish to their taste preferences.
- Endless Pairing Possibilities: All of the usual steak favorites apply, such as red wine, mashed potatoes, biscuits, or a crisp green salad. Really, the possibilities are endless.
- Andria’s Steak Sauce: The secret ingredient behind today’s recipe, and arguably the star ingredient – alongside the steaks themselves. This sauce infuses the steaks with its tangy, savory flavors. Combining ingredients such as onions and parsnips, along with turnips, carrots, and parsley, this sauce is pungent, pleasantly thick, and just a tad sweet. Though most at home on things like beef roasts, burgers, or steaks, it also tastes great on fattier fishes such as salmon or shark. Grab a bottle, I promise you won’t be disappointed
Ingredient Checklist – Everything You’ll Need
- 4 bacon-wrapped filet mignon steaks
- Note: You can buy pre-cut bacon-wrapped filets, or wrap filet mignon steaks with your preferred bacon slices. I recommend thick cut, plain smoked bacon.
- Coarse black pepper
- Note: Using coarsely ground black pepper is important to achieve the desired texture. We want there to be a nice bit of contrast from the pepper to the meats tenderness.
- Coarse salt
- Note: Kosher salt or sea salt works well. Adjust salt quantity to taste.
- Two sprigs of fresh rosemary
- Note: Substitute with thyme or other herbs for variety.
- Butter
- Note: Use unsalted butter to control the overall saltiness.
- Olive oil
- Note: Choose extra-virgin olive oil for best results.
- 3 cloves of garlic
- Note: Crush the garlic, and then give it a few chops, there’s no need to fuss with dicing it up finely.
- Andria’s Brush on Steak Sauce
- Note: The star ingredient, and the perfect finishing touch for today’s steaks.
Now, you're ready to create this delicious and flavorful bacon-wrapped filet mignon dish!
The perfect cut for today’s recipe – Filet Mignon
Filet mignon, renowned as the "king of steaks," stands out as the perfect choice for this recipe, and here’s why.
- Texture: Filet mignon comes from the tenderloin, a muscle that undergoes minimal use, resulting in unparalleled tenderness. This quality makes it an ideal candidate both for searing and for wrapping in bacon, as the bacon's crispiness complements the buttery tenderness of the filet. Searing, too, achieves a contrast in texture, with a crisp exterior and buttery interior. Delicious.
- Lean Cut: Filet mignon is one of the leanest cuts of beef, characterized by its low fat content. This allows the meat's natural flavors to shine, and when paired with bacon, which adds a savory and slightly salty element, the combination is perfectly balanced.
- Consistent Thickness: Filet mignon steaks are typically uniform in thickness and shape, allowing for even cooking. Their circular shape also makes the bacon wrapping process a breeze.
Variations – Getting Creative
Here a couple of ways to get creative with today’s recipe.
- Herb Infusion:
- Variation: Instead of, or in addition to, rosemary, experiment with other fresh herbs like thyme, tarragon, fresh basil or fresh oregano for a herb-infused filet.
- Why: Different herbs bring distinct flavors, allowing you to tailor the dish to your taste.
- Spice it Up:
- Variation: Add a pinch of cayenne pepper or red pepper flakes to the salt and pepper rub for a spicy kick. Conversely, considering dicing up spicy peppers and adding that to the rosemary and garlic.
- Why: This is a super simple recipe to add heat to for those that like a spicy kick.
- Garlic Lovers' Delight:
- Variation: Increase the quantity of garlic or incorporate roasted garlic cloves for a more pronounced garlic flavor. You could also make some garlic butter, and dollop that onto the steaks.
- Why: Upping the garlic is super simple in this recipe, while the addition of garlic butter plays deliciously with the steak and bacon.
- Wine Reduction Glaze:
- Variation: Create a red wine reduction glaze by deglazing the pan with red wine after searing and reducing it until syrupy. Brush this glaze on the filets.
- Why: Introduces a sophisticated layer of flavor and richness to the dish.
- Blue Cheese Stuffed:
- Variation: Cut a slit in the filets and stuff them with blue cheese before wrapping in bacon.
- Why: The melted blue cheese adds a creamy and tangy element, creating a decadent experience.
- Coffee Rub:
- Variation: Create a coffee-based dry rub by adding ground coffee to the salt and pepper mix.
- Why: The coffee imparts a unique depth of flavor, complementing the smokiness of the bacon.

Catherine, Lovely preparation for filet Mignon. Its the lack of fat that causes us prefer ribeye steaks. However, with the bacon wrap and seasoning you have with this recipe, we could easily make an exception to our normal practice.
Wishing you and yours a Merry Christmas as well as a Happy and Healthy New Year! Take Care, Big Daddy Dave
