Today we're talking with Executive Chef David Rose, who has some great ideas and tips to really make your barbecue game shine this summer season. We'll be covering how one of the most important aspects of having a great grilling game starts with 'knowing' what you'll be grilling.
Having a freezer full of delicious meats, encompassing seasonal favorites like pork chops, quality hot dogs, and bacon wrapped filet mignons, removes any lingering uncertainty as to the 'what' when it comes to grilling. And that's where Omaha Steaks comes in.
This year, Omaha Steaks is offering samples of traditional summer favorites, courtesy of their Father's Day line of gift packages.
With Omaha Steaks' Premier Father's Day Gift Package, you'll receive gift box full of grill-friendly favorites, such as perfectly aged Butcher's Cut Filet Mignon, and PureGround™ Filet Mignon Burgers, along with Gourmet Jumbo Franks, extra-thick boneless pork chops, and air-chilled boneless chicken breasts.
With their aptly titled Best Father's Day Gift, you'll receive 'my' personal favorite bacon wrapped filet mignons, along with a variety of other barbecue favorites such as filet mignon burgers, and - once again - gourmet jumbo franks.
Next up, we have the Ultimate Father's Day Gift Package. This comes with a free package of applewood smoked steak-cut bacon, along with Butcher's Cut Top Sirloins, extra-thick boneless pork chops, and a variety of other barbecue favorites, such as Omaha Steaks ultra-juicy burgers.
Finally, we come to the Deluxe Father's Gift Package. This is a simple yet delicious combination of hand-cut bacon-wrapped filet mignons, deliciously tender air-chilled boneless chicken breasts, and Omaha Steaks signature burgers, and, naturally, a pack of Gourmet Jumbo Franks.
Today, we're showcasing the Gourmet Jumbo Franks, because I don't think anything quite says "Summer Grilling" like quality hot dogs. We'll be dressing up these franks with a jalapeno relish, fresh sliced tomato, plenty of cheddar, and caramelized onions. Grilled watermelon, peaches, and corn to complete the summer seasonal platter.
Why You'll Love Today's Jumbo Franks
1) Keeping it simple. We're grilling, and only grilling. From the grilled watermelon to the franks themselves, everything goes right onto the grill. Everything else is being consumed 'as is.' For example, the jalapeno relish is simply diced jalapenos mixed with relish. This keeps things simple, and 'in the season.'
2) Fun for the Whole Family. Today's franks are delicious for palates of all ages and persuasions. Seriously, this is a crowd pleaser like few others.
3) Experimentation. This recipe is ripe for experimentation. Consider using gouda, oxaca, or mozzarella in place of the cheddar. Consider roasting the jalapenos before mixing them with the relish. Or perhaps blister the tomatoes before piling them onto the franks. Consider dressing up the buns with chili oil before grilling. Seriously get as fancy as you like. These Gourmet Jumbo Franks are worth it.
Ingredient Notes and Tips
1) The Jalapenos - And Your Preferred Heat Level. While I'm using jalapenos, consider spicing things up with hotter chilies, or even toning down the heat in favor of milder peppers. For reference, jalapenos clock in a 'middling' 2,500 to 10,000 units on the Scoville heat scale, jalapenos are best described as 'somewhat spicy.' By contrast, cayenne rates between 25,000 and 50,000 on that same heat scale.
2) The Mustard. Yellow mustard, plain yellow mustard, is what I'm using for today's recipe, and I'm doing so primarily because I think this plays best with the caramelized onions. Now, while I love whole-grain mustard as much as the next gourmet, it would simply be overpower 'everything' on today's franks, including the franks themselves. It really would be 'all' you taste. Thus, plain yellow mustard it is. Trust me…or don't, and if you don't, please let me know in the comments below how it turned out, I love hearing from you!

Talk about loaded hot dogs! We finally took our grill out and made these. They were amazing! I've never put jalapenos on my hot dogs but they added a nice kick and made them so much more flavorful along with the rest of the toppings.
