  • Strawberry Preserves - you can use raspberry preserves or blueberry as well
  • Chopped Almonds
  • Heavy Cream - make sure to keep it chilled
  • Confectioner's Sugar
  • Unflavored Gelatin - a stabilizer for the whipped cream

🍓 Why Fresh Summer Strawberries Matter

Strawberries taste better midsummer for a reason. The long sunny days help the plant produce natural sugars. That's why, if you have ever noticed, store-bought strawberries taste so much better in the summer than they do in the winter.

On that note, locally grown strawberries are the best option for recipes like today's, where they are the star ingredient. Many local farms grow what is known as "June-bearing" strawberries. These berries stay on the plant until the last second, allowing the fruit to absorb as much sugar before harvest. Whereas store-bought batches are put into storage for transportation, allowing those sugars to turn to starch over time.

Can I make this cake ahead?

The cake layers can be baked one day in advance and wrapped tightly. Assemble with whipped cream and fresh strawberries a few hours before serving for the freshest presentation.

Can frozen strawberries be used?

No. This cake is a celebration of seasonal freshness, but more than just that, frozen strawberries, once thawed, become mushy and may make the cake soggy.

How long will whipped cream stay fresh?

If it's stabilized, it will last in the fridge for 2-3 days for optimal freshness.

Why is my whipped cream runny?

If you find your whipped cream is runny or weeping a couple of hours after whipping, it is most likely due to two causes: 1) Temperature. Always whip cold cream in a chilled metal bowl. You will find the cream whips up in just a couple of minutes when the temperature is right. 2) Not enough/No stabilizer. A teaspoon of unflavored gelatine helps the cream keep its shape for days.

Can I substitute mascarpone?

Yes, you can absolutely substitute whipped cream for mascarpone!

What's the difference between strawberry shortcake and strawberry cream cake?

Traditionally, strawberry shortcakes are made from sweet, crumbly biscuits (similar to a scone), while strawberry cream cake is made with either a sponge cake or vanilla cake.

Can I bake this in 8-inch pans?

Yes, of course, but you need to adjust the bake time. For today's recipe, I used a 9-inch cake pan. If you are using a smaller pan, extend the cooking time; if you're using a larger pan (such as a 10-inch), lower it slightly. Always check if the center of the cake jiggles when you move it. If it seems the cake is set in the center, make sure the cake tester comes out clean to confirm.

Ingredients

  • 1/2 cup unsalted butter, softened
  • 2 1/2 cups flour
  • 3 tsp. baking powder
  • 1 tsp. satt
  • 1 1/2 cups sugar
  • 1 cup whole milk
  • 1 tsp. vanilla
  • 2 eggs
  • 1 quart fresh strawberries, halved
  • Strawberry preserves
  • 1/2 cup of chopped almonds
  • 1 pint heavy cream
  • 1 tbs. confectioner's sugar
  • 1 teaspoon unflavored gelatin
  • 1 tsp. vanilla

Instructions

  1. Preheat oven to 350 degrees F.
  2. Stir the softened butter in a large mixing bowl. Add the eggs and vanilla, and continue to beat until whipped.
  3. In a separate bowl, sift together the flour, baking powder, salt, and sugar.
  4. Alternating between the dry ingredients and the milk, add to the beaten butter and eggs mixture until a thick, smooth batter comes together.
  5. Butter two 9-inch layer pans and dust each with flour.
  6. Divide the batter between the two pans.
  7. Bake for about 20-25 minutes depending on the range of your oven. If the sides are golden, the cake has risen, and the center seems to have set, remove the cakes and test with a cake tester. If it comes out clean, the cakes are done baking.
  8. Let the cakes cool on a wire rack until cool enough to loosen from the pans. You want the cakes at room temperature before assembling.

Assembly:

  1. In a chilled metal bowl, whip cold heavy cream, a tablespoon of confectioner's sugar, a teaspoon of gelatin, and a teaspoon of vanilla. Beat until stiff peaks form.
  2. Spread two tablespoons of the strawberry preserves, or more if you like, on the bottom side of the first layer of cake.
  3. Top with strawberries, sprinkle with chopped almonds, and then cover with whipped cream.
  4. Place the topside of the next cake down so that it is flat-side up and spread with more strawberry preserves, topped with halved strawberries, followed by the whipped cream and sprinkled with the chopped almonds.
  5. Serve immediately and enjoy!
