Savor the flavors of summer all year round with this delicious BBQ recipe!
“For the purposes of show business, it doesn’t matter how well you do something, what matters is how well people ‘think’ you do something, and whether people will pay to watch you do it again.” This sentiment is an echo of Plato, who was in turn echoed by the Great Cynic Seneca, saying, in short, that our perception is our personal version of reality. “The same air felt by two different people can be both cold and warm. Who is to say which perception of the air is real or false?”
Now, true or false, this mode of thinking has very real applications in the kitchen. No, I’m not taking about your favorite brand of faux-butter, or the latest fad in veggie-desserts. Instead, I’m talking simple flavor. Seasonal flavor, to be precise.
We’re all familiar with the various brands of ‘barbeque in a bottle’ sauces, which are intended to give ‘real barbeque flavor’ without the hassle of braving the elements to fire up the grill.
I found myself wanting to do precisely that, and for precisely that reason, just a few days ago. You see, it was simply excellent weather, and I wanted to set dinner out onto the porch to enjoy a clear New York summer night with some barbecued chicken. Except, of course, I just couldn’t bring myself to lug a bag charcoal out of the garage and then fiddle with matches and lighter material.
Yet, achieving that barbecue flavor is, of course, where today’s recipe comes in – Barbecued Chicken sans The Barbecue.
To start things off, we begin by preparing a classic BBQ Sauce with a ketchup, honey, and orange juice base. To this, we add in curry, I prefer the Jamaican variety although you can use whatever you have available, along with some coriander cumin, black pepper, and regular salt. Once that’s done, we toss the chicken thighs in this mixture, and then cover to leave in the refrigerator for a few hours or preferably overnight. You can use immediately, however, if you need to.

Ingredients
- 10 - 12 bone-in chicken thighs without skin
For the BBQ Sauce:
- 1 cup ketchup
- 1/4 cup orange juice
- Juice of 1 fresh lemon
- 1/2 cup honey
- 1 tsp. Jamaican curry
- 1 tsp. ground coriander
- 1/4 tsp ground cloves
- 1/2 tsp. cumin
- 1/2 tsp. black pepper
- 1/2 tsp. salt
Instructions
- Combine all the ingredients for the bbq sauce in a small bowl.
- Place the chicken thighs in a bowl; add the bbq sauce; toss and cover. You may let the thighs sit in the refrigerator for a few hours or use immediately.
- Preheat Oven 350 degrees F.
- Place the thighs in a baking dish and cook for 45 -50 minutes or until the juices run clear and the thighs turn a beautiful color.

Once that’s done, set the thighs in a baking dish, and cook in the oven as directed below for about fifty minutes at three-hundred and fifty degrees. And just like that, you have barbecued chicken without the barbecue fuss.
