BBQ Baked Chicken Thighs

Ingredients

  • 10 - 12 bone-in chicken thighs without skin

For the BBQ Sauce:

  • 1 cup ketchup
  • 1/4 cup orange juice
  • Juice of 1 fresh lemon
  • 1/2 cup honey
  • 1 tsp. Jamaican curry
  • 1 tsp. ground coriander
  • 1/4 tsp ground cloves
  • 1/2 tsp. cumin
  • 1/2 tsp. black pepper
  • 1/2 tsp. salt

Instructions

  1. Combine all the ingredients for the bbq sauce in a small bowl.
  2. Place the chicken thighs in a bowl; add the bbq sauce; toss and cover. You may let the thighs sit in the refrigerator for a few hours or use immediately.
  3. Preheat Oven 350 degrees F.
  4. Place the thighs in a baking dish and cook for 45 -50 minutes or until the juices run clear and the thighs turn a beautiful color.
