Our gluten-free carrot cake doesn't taste gluten-free at all. It offers an ultra-moist, tender crumb perfectly spiced with cinnamon and cloves. We top it off with a dreamy cream cheese frosting bursting with the brightness of orange essence.
Best of all, unlike a lot of other gluten-free recipes out there, we don't use complicated blends or hard-to-find grain-free alternatives. For today's recipe, I use finely ground almond flour, which I believe is the best flour for gluten-free carrot cake.

Because our gluten-free carrot cake recipe consists of simple, pantry-friendly ingredients, it's so easy to make, especially in a pinch. It is also ideal for make-ahead desserts (see our tips on storing it for optimal freshness below).
Everything gets mixed into one bowl, baked between two cake pans, then assembled with a simple frosting. As far as cakes go, it doesn't get any easier than that.

- Almond Flour
- Use finely ground almond flour for the best texture (I used Bob's Red Mill). It creates a soft, cohesive crumb rather than a dense or grainy cake. Avoid almond meal, which is coarser and can weigh the cake down. Alternatively, you can also use a gluten-free all-purpose flour blend.
- Carrots
- Freshly grated carrots are key. They bring moisture, sweetness, and structure.
- Cooking Oil
- Use a neutral oil like corn or vegetable oil to keep the cake moist without overpowering the flavor. You can also use light olive oil for a slightly deeper note.
- Spices
- Cinnamon and cloves give this cake its warmth. If you enjoy a fuller spice profile, a pinch of nutmeg or ginger can be added.
- Vanilla
- Vanilla is an essential for me when it comes to baking. A bit of almond extract would also be delicious here.
- Eggs
- Eggs help to bind the batter.
- Baking Powder
- In combination with baking soda, baking powder helps the cake to rise and promotes a lighter texture.
- Baking Soda
- Sodium bicarbonate creates an immediate lift so you're not stuck with a flat, dense cake.
- Sugar
- I used a blend of granulated sugar and brown sugar for a couple of reasons. On a more scientific note, the molasses in brown sugar helps the baking soda to react, which aids in the rising process. It adds a deeper color and flavor to the final result as well.
- Cream Cheese Frosting
- The touch of orange zest brightens the frosting and balances the richness. It's subtle, but it makes all the difference.



Substitutions & Variations
- Make it Dairy-Free
- Use dairy-free cream cheese and butter alternatives for the frosting
- Sweetener Alternatives
- You can absolutely use cane sugar or coconut sugar in today's recipe. I have not tested liquid sweeteners such as honey, maple syrup, or agave. So, if you choose to experiment with any of those, please keep in mind that it will alter the texture of the cake.
- Add Texture
- Fold in chopped walnuts, pecans, and/or raisins for a bit of crunch and a more traditional taste.
- Oil Alternatives
- Substitute with melted coconut oil, avocado oil, or butter.
- Single Layer or Sheet Cake
- Bake in a 9x13 pan and adjust baking time to approximately 40-50 minutes.

Tips for the Best Texture
A few final notes on achieving the perfect gluten-free consistency:
- Do not overmix the batter once the dry ingredients are added

Ingredients
- 3/4 cup sugar
- 1 cup brown sugar
- 3/4 cup corn oil
- 1 tsp. vanilla
- 4 eggs
- 2 cups finely ground almond flour (I used Bob's Redmill)
- 1 tsp. baking soda
- 1 tsp. baking powder
- 1 tsp. ground cinnamon
- 1/2 tsp. cloves
- 3/4 tsp. kosher salt
- 3 cups shredded carrots
For the Frosting:
- 8 oz. cream cheese - softened
- 4 tbs. unsalted butter - softened
- Zest of 1/2 orange
- 3/4 cup confectioners' sugar
- 1 tsp. vanilla
- 1/4 tsp. salt
Instructions
- Preheat oven to 350 degrees F.
- Combine the sugars, oil, vanilla, and eggs in a bowl and mix with an electric mixer.
- Stir in the dry ingredients and the carrots.
- Grease two 8-inch baking pans and divide the batter evenly between them.
- Bake 50 - 55 minutes. Let cool.
For the Frosting:
- Combine the cream cheese, butter, confectioners' sugar, orange zest, vanilla, and salt in a medium bowl, using an electric mixer; mix until smooth and creamy.
- Spread on the cooled cakes. Decorate as desired.
