    According to Robert Frost "You can't get too much winter in the winter." As I look out from my office window, I see freshly planted pier poles lining my dock, each crowned in white, and behind them…nothing but yet more whiteness. You see, yesterday I awoke to yet another blanket of snow, and this morning I awoke to yet more wintery flooding.

    Needless to say, whatever my plans may have been for today, they had receded along with the tide. This, of course, pushes the current nautical theme of my posts ever onward. Lately, whether through some subconscious guide, or directed by this uniquely Northwestern wintery mix, which seems intent on never ending, there's been a bit of a nautical theme here on Living the Gourmet, and I can do naught but announce that today will hardly be any different.

    As you may have gleamed, doing things from scratch isn't necessarily always the easiest route to take, especially if your cooking on a weeknight, or have activities planned that run beyond the kitchen and dining room, and that's where today's recipe comes in.

    Since everything is better with shrimp, I decided on a spicy seafood marinara sauce set over fettuccine, since there's really nothing like a seafood sauce and some pasta when trapped inside by the elements. However, given that I had just finished up with the nieces and nephews a few days earlier, I wasn't particularly keen on starting a whole new production all over again.

    And that's where SeaPak® comes in, which I picked up in the frozen aisle during last week's supply run to Walmart. To cut down on the prep time in dishes like this, there's perhaps no easier or better quality alternative than SeaPak® products. Now, I know what you're thinking, that 'frozen seafood' and 'quality seafood' are, almost by virtue of their existence, entirely antithetical to one another. However, I speak from experience when I say that these shrimp paired excellently with today's sauce, and helped warm an otherwise frigid northeast night.

    To start things off, we sauté some garlic and parsley in olive until that absolutely delicious aroma has filled your kitchen, and then add the crushed tomatoes and seasonings as described below. While that comes to a simmer, prepare the SeaPak® as directed.

    Ingredients

    Units Scale

    For the Seafood:

    • 1 package SeaPak Butterfly Shrimp
    • 1 package SeaPak Popcorn Shrimp
    • 1 package SeaPak Beer Battered Shrimp

    For the Sauce:

    • 2 - 28 oz. cans of crushed tomatoes
    • 4 - 5 cloves of garlic - crushed
    • 1/2 cup of fresh Italian parsley - chopped
    • 1 1/2 tsp. salt
    • 1 1/2 tsp. black pepper
    • 1 tbs. dried oregano
    • 1 tsp. red pepper flakes
    • 1/2 tsp. sugar
    • 3 tbs. olive oil
    • 1 lb. of your favorite pasta
    • Grated Romano or Parmesan cheese
    • Fresh lemon slices for garnish

    Instructions

    1. Heat a heavy saucepan with the olive oil.
    2. Add garlic and parsley to the pan and sauté until the garlic is fragrant.
    3. Add the crushed tomatoes and seasonings and continue to simmer on a gentle heat for 25 – 30 minutes.
    4. While the sauce is gently simmering prepare the Seapak as directed.
    5. Prepare the pasta as directed
    6. Place the pasta is a large serving bowl.
    7. Add the cooked seafood and the tomato sauce and gently toss.
    8. Drizzle a little olive oil, a few dashes of red pepper flakes, lemon and grated cheese and fresh parsley over the dish and serve.

    Once that's ready, set over your fettucine, and you're wintery dish is ready to serve. On a side note, spaghetti or linguine would serve just fine, it's a matter of preference.

      I almost feel guilty that you "guys" are getting so much snow down there and we barely have a dusting here in PA. I was talking to my sister yesterday, she lives in Islip, and she has had enough! Hopefully, it will warm up soon, Catherine:)

      I was never much for frozen seafood but, here in PA, the choices for good seafood are quite limited. (not like running down to the dock for a fresh catch like I use to be able to do:)

      Of course your Seafood Marinara looks mouthwatering, Catherine. Easy, quick and delicious, with time left over for enjoying the scenic wintry mix from the inside!

      We haven't gotten too much snow here (yet) but I know it's bound to come soon. We do have negative wind chills and single digit temps, which makes me want to stay inside all day and eat comfort food like this! This pasta looks gorgeous, Catherine!
