Well, the NY temperatures have reached single digits here with more snowfalls slated for this week. Everyone had been warned not to go out this weekend, which made it feel a lot like Fargo.

I can't really say that I minded the notion of staying indoors, vegging out, playing games and cooking up some comfort food. Actually, it was just what the doctor ordered. I'm feeling more relaxed and ready to tackle the new week.

But let's reminisce a bit longer of the weekend.

Due to the cold weather and pretty empty schedule, it was perfect time to get ready for February's Secret Recipe Club challenge.

My assigned blogger this month is Jamie from Our Eating Habits, a lovely blogger, mom and foodie.

I was thrilled to make something from her site. I would have made this Double Pumpkin Poke Cake if it was not for Lent, but it is on my list of desserts to try after Easter.

Finally, I stumbled upon her fabulous Ham & Cheese Bowties. Be still my heart! Anything with pasta and that much cheese is a winner in my book. Without hesitation, I copied her recipe and got to work.

Ham and Cheese Skillet Pasta

Ingredients

Units Scale
  • 3 cups pasta your choice
  • 1 tablespoon butter
  • 1 clove garlic, grated
  • 1/2 cup chopped ham
  • 1/2 cup whole milk
  • 1 cup Colby & Monterey Jack Cheese, grated
  • 1/4 cup all-purpose flour
  • Salt and Pepper to taste
  • 2 tablesppons breadcrumbs

Instructions

  1. Bring a medium pot of water to a boil. Add pasta and cook for 15 minutes or until al dente.
  2. Preheat oven to 400 degrees F.
  3. In a medium skillet, melt down butter with garlic. Add ham and cook until slightly golden. Add milk and cheese. Once the cheese begins to melt whisk in flour, and a pinch of salt and pepper. Once a thick sauce comes together, toss over the pasta, then return to the skillet.
  4. Sprinkle with breadcrumbs and bake for 10 minutes. Serve and Enjoy!
  • Prep Time: 5 minutes
  • Cook Time: 25 minutes

I made some slight changes to this recipe. I scaled it down a bit two serve two, but if it's a side dish then it will be perfect for four. I didn't have bowties on hand, but as you can see any pasta will do. Lastly, I finished it off with just a sprinkle of breadcrumbs.

    Mac and Cheese is always one of my favorites! I love that this incorporates the Ham too and is made in a skillet pan!
