This is a simple version of lasagna that turned out quite good. The longing for some real comfort food and the desire to make it easy and cook with what was on hand gave way to this dish.

Ingredients

Units Scale
  • 2 lbs. of loose Italian sausage
  • 9 oz box of frozen chopped spinach
  • 1 quart of button mushrooms - sliced
  • 4 - 5 cups of marinara sauce
  • 16 oz of mozzarella - shredded
  • Parmesan or Romano cheese for grating
  • Olive oil
  • Dashes of salt
  • Dashes of dried oregano
  • Dashes of red pepper flakes
  • Dashes of black pepper
  • 1 lb. of lasagna noodles

Instructions

  1. Heat the sauce.
  2. Heat a large frying pan with 2 tablespoons of olive oil. Add the spinach and sauté in the pan until thawed and dry. Remove and place in a dish until ready to use.
  3. Add another tablespoon of olive oil to the pan; add the sliced mushrooms to the pan; along with dashes of all the spices. When the mushrooms are slightly golden remove and toss with the spinach.
  4. Add the sausage to the pan and sauté until cooked. Add the sausage to the mushrooms and spinach and toss.
  5. Cook the noodles as directed.
  6. In a large baking dish; ladle sauce at the bottom and top with the noodles. Spoon the sausage, mushroom and spinach combo on top. Sprinkle with the cheese and grating cheese; more sauce and another layer of noodles. Repeat this process until the noodles are used.
  7. Preheat Oven 300 degrees.
  8. Bake for 40 – 45 minutes.

    I don't see how you did all that pre-cooking in only 10 minutes -- you must be much faster than I am! You refer to cooking the pasta but I wondered if you couldn't just use the no-boil lasagne noodles to make it faster. I think they are the best invention in the whole pasta family!
