I had no plans for Saturday night dinner.
The day had passed in the blink of an eye. There was still work to finish up on the computer, decorations to put out, laundry to do and groceries to put away.
As I began putting away the fruits, the squash, the peppers and the rest of the veggies, I saw in the refrigerator a package of Italian sausage and thought stuffed peppers!

Dear Catherine, I guess I should have stopped over Saturday night. What a feast! You know Catherine, we have said this so many times before, but it needs to be repeated, the simplest ingredients make the best meals. I love the way you just make an awesome meal with what ever you find. I was surprised to see this in your ingredients, the rye bread. What a different ingredient to add. They look spectacular! I love stuffed peppers. My mom used to make them with a type of meatball filling in a dutch oven, with a little tomato and then once they were cooked she would place them on rice with the sauce on top. Thanks for sharing...have a blessed rest of the week...Dottie 🙂

Hi Catherine:)
Stuffed Peppers have saved many a dinner night for me. Even if I haven't taken any meat out of the freezer, there's always rice in the house and other fixins' Lately I've been adding Quinoa which is a nice touch.
Can you tell we love Stuffed Peppers around here, lol...I love the notion of Rye bread too. I must try that. We always have Rye bread in the house too, lol...
Thank you so much for sharing, Catherine...I'm sure your dinner was absolutely dee..li...cious...
