Peanut Butter Bites

Jan 6, 2014 · 22 Comments

How quickly the snow has come and gone.  Now the rain is falling, falling and falling and “Mr. Snowman” who so was built with love and joy and so bravely guarded the front door is but a puddle and a memory saved.

The rain came so fast, Mr. Snowman never got his arms…or eyes to see the beautiful white winter around him.  He was more like a Snowman ghost (the Snowman of Christmas Past)…but he was loved and will be missed dearly.

Time comes and goes and yet one never learns the preciousness of it until there is none left.

Ingredients:
1 cup peanut butter
1 cup vegetable shortening
1 cup brown sugar
1 cup sugar
2 cups oats
2 eggs
2 cups flour
1 tablespoon vanilla
1 tsp. baking soda
1 cup milk
Preheat Oven 350 degrees:
Combine all of the dry ingredients in a bowl.
In the food processor process the peanut butter, milk, vanilla and eggs and process.  Slowly add the dry ingredients to the processor.
Prepare cupcake tins with butter.
Bake 18-20 minutes or until the toothpick test comes out clean.
Enjoy with Love,
Catherine

Oh, we still have plenty of snow left here. Just the beginning of January, and I'm ready for spring already!

I think he still looks kinda cute, Catherine:) Our snow is all gone here too. The rain washed it all away. It's sure is cold though. I wouldn't mind having one of those Peanut Butter Bites with a nice cup of tea. Thank you so much for sharing, Catherine. I hear it's pretty darn cold down in New York too. Stay warm...

It is true - time is precious. And it is like 10 degrees here. When I see those cookies I think of a nice chocolate dip to go with them! sandie

Hi Catherine, So sad about the snowman, but I am sure he will be back before spring. We are going to be in a cold freeze the next few days. Theses muffins will be perfect to have along side a cup of something hot! I love anything with peanut butter. Thanks for sharing...Keep warm and safe! Blessings, Dottie :)

You're so right about time Catherine, we have to savor every moment. Your snowman is such a good mental image of that and I bet your muffins disappeared even faster than the snow man! Very yummy sounding!

Our snow is still here; but we haven't made a real snowman yet. Now I know our project for the snow day! I am on a peanut butter kick and these little bites would definitely satisfy my craving. They look amazing, Catherine!
