Simple – Warm Macaroni Salad & Merry Christmas

Merry Christmas!

Simple Warm Macaroni Salad:

Ingredients:

1 lb. small bowtie macaroni
2 stalks celery - chopped
½ cup Italian parsley - chopped
3 cloves garlic - chopped
½ cup raisins - chopped
2 tablespoons - olive oil
1 tablespoon - butter
Grated Romano cheese
Dressing:
Juice of 1 lemon
3 - 4 tablespoons olive oil
½ tsp. salt
¼ tsp. red pepper flakes
¼ tsp. black pepper
Heat a large cast iron frying pan with the olive oil.  Add the celery, garlic, parsley and raisins. Sauté until the onions are softened. 
Prepare the macaroni as directed and lift out of the water and into the frying pan.
Prepare the dressing and pour over the macaroni.  Toss in the grated Romano cheese.
Finish with an extra drizzle of olive oil, red pepper flakes and more grated cheese.
