Chunky Oatmeal Cookies

It is raining, raining hard; though it has been raining for a long while now.  The ground is saturated and the river has reached its peak.  No more, no more may it be filled.  It has been cleansed and it is time to rejoice in the new.  It is time to bring forth the new day with humility yet assured that your fears are not yours; your doubts are no longer.  For you have given these up and your path belongs to Him.

Ingredients:
½ cup raisins
½ cup chocolate chips
2 ½ cups flour
2 cups oats
1 tsp. baking soda
1 tsp.  Salt
1 tsp. vanilla
1 tsp. cinnamon
1 egg
¾ cup milk
½ cup white sugar
½ cup brown sugar
5 tbs. butter
Preheat Oven 350 degrees:
Combine butter and sugars in a food processor and process until creamy.  Add the egg, vanilla, chips and raisins and process.
Combine all of the dry ingredients in a bowl.  Alternate; the dry ingredients and the milk to the food processor while processing.
Place on a non-stick cookie sheet and bake 10 - 12 minutes or until golden on the edges.

    Catherine, Those are some great looking oatmeal cookies. I prefer mine without any chocolate but my wife would vote for it in hers! Here in East Tennessee, we are more than 20 inches past our average rainfall amount. The Tennessee Valley Authority is constantly opening the spillways on the dams to keep the water levels down on our many lakes. Good news is that with excess hydroelectricity generation, our electric bills are down a little this year! Wishing you and yours a Happy, Healthy and Safe New Year! Take Care, Big Daddy Dave
