    Jelly Doughnut Muffins

    I should have taken a picture of these open so you could see all the jelly ooze out when you bite into it.

    But I was distracted...and hungry to eat one...ok three.  Don't judge me.

    Now, I'm not throwing roses at myself buuuut.....this was way better than my first attempt at doughnut muffins.

    Of course though, if you stuff anything with jelly, it'll be a hit.  Lesson learned.

    So.  If you want to see what the inside of these gems look like, there's only one way to find out.  Make them yourself.

    Jelly Doughnut Muffins

    2 cup AP flour
    1 cup white sugar
    1/2 cup confectioner's sugar
    2 teaspoons baking powder
    1 egg
    1 cup whole milk
    2 tablespoons butter, melted
    1 teaspoon vanilla

    Strawberry Jam
    White sugar

    Preheat oven to 350 degrees F.  Grease muffin tin, set aside.

    In a medium bowl, sift together flour, sugar, confectioner's sugar, and baking powder.

    In a separate bowl, whisk together egg, milk, butter, vanilla.  Add mixture to dry ingredients.

    Fold batter until well incorporated and light.

    Pour muffin tins half way. Place about 1/2 teaspoon of jam in center of batter and fill the rest of muffin tin.

    Bake for about 20 minutes or until tester comes out clean.

    Let cool for a several minutes before rolling each doughnut in sugar and transferring to a lined cooling rack.

    Serve and Enjoy!

      Catherine, these would be a big hit at my house especially with strawberry jelly! They are also very pretty. Going to pin them to make for husband & his co-workers (they get a treat every Friday).

      As I was switching through TV channels last night, I caught just the right moment on the Letterman show. He was talking Duffins. He explained them as Donut Muffins. However, he never said one word about jelly being inside of them!!! I would love one or three right about now, Tammy.
