Ingredients:
3 lbs. boneless chicken breast – sliced to desired thickness
2 tablespoons olive oil
Dry Rub:
1 tsp. Jamaican curry
½ tsp. cloves
½ tsp. cinnamon
½ tsp. sugar
¾ tsp. salt
¾ tsp. black pepper
2 tablespoons olive oil
Combine all of the ingredients for the rub in a small bowl.
In a bowl place the chicken pieces and toss with the dry rub.
Heat a large frying pan with the olive oil and place a few pieces of chicken. Do not overcrowd the pan. When the chicken is golden on one side turn and finish cooking. The cooking time will depend on how thick you sliced the chicken pieces.
