Summer has always been the balm to my soul, and though it saddens me to see it coming to an end, I will not take a moment of what is left for granted.
The days seem to be melting into a soft, hazy blur...it's hard to believe that it's August.
I can tell by the slight chill lacing the evening air that Autumn isn't that far off now. For the past couple of weeks it has even been cool enough to turn the oven on.
There was an abundance of peaches this year....peaches and blueberries. I can never get enough of either, but today it's all about the peach.
I've been craving something simple. Nothing fancy or crazy.
Baked peaches are always a delightful treat to have in the evening. What's even better are peaches and cream. Ice cream that is.
Baked Peaches and Cream
For peaches you will need:
5 ripe peaches, pitted
1 tablespoon honey
1 teaspoon mixed berry marmalade
2 tablespoons butter, cubed
Preheat oven to 350 degrees F. Arrange peaches in a baking pan.
In a small bowl combine honey and marmalade. Spread over each peach. Then place a cube of butter in the center of each peach.
Bake for 30 minutes or until golden and bubbly.
Remove and let cool on a rack.
For ice cream you will need:
1 can sweetened, condensed milk
A pinch of salt
1/2 teaspoon vanilla
1 cup heavy cream, whipped with a tablespoon of confectioners sugar
In a stand mixer, combine condensed milk, salt and vanilla.
*Fold* in the whipped heavy cream gently. Transfer to a container and freeze until solid.
Now on to an even sweeter note...

In the crowded and constantly growing market of protein bars, energy drinks, and 'healthy alternatives,' it is easy to lose sight of the products that truly do deliver on these promises. Zego is one such product. Though new on the scene, and still partially in development, Zego operates with a clear purpose - to deliver safe, delicious, nutrition packed snack alternatives.
Boasting 10g of protein per bar, a low glycemic index, and such ingredients as quinoa, organic agave, and cacao, Zego bars are specially formulated for long lasting energy, making them perfect for athletes, students, or as a much needed boost during the grind of a busy work day.
Beyond their taste and nutrition, Zego gives an impressive 20% of their profit to charity to help childhood nutrition through the Campaign for Better Nutrition. So with each bar of Zego you purchase, you aren't just giving yourself nutrition and energy, you are helping to make a difference in the lives of the underfed and malnourished! 😀

I've really missed peaches this year! I'm from South Carolina and peaches get a bit like zucchini there - people can't give away enough and you can't eat them fast enough - but I've spent the summer in Hawaii. Papayas and mangos are 20 cents at the market (if you cant' just find them for free) and that's awesome, but I miss peaches! Your recipe is beautiful and I hope there are some peaches left when I get back to SC next week.

We still have a long way to go until it cools off here in the desert. The peaches look worth turning the oven on for though.
