    Baked Peaches

    Summer has always been the balm to my soul, and though it saddens me to see it coming to an end, I will not take a moment of what is left for granted.

    The days seem to be melting into a soft, hazy blur...it's hard to believe that it's August.

    I can tell by the slight chill lacing the evening air that Autumn isn't that far off now.  For the past couple of weeks it has even been cool enough to turn the oven on.

    There was an abundance of peaches this year....peaches and blueberries.  I can never get enough of either, but today it's all about the peach.

    I've been craving something simple.  Nothing fancy or crazy.

    Baked peaches are always a delightful treat to have in the evening.  What's even better are peaches and cream.  Ice cream that is. 

    Baked Peaches and Cream

    For peaches you will need:

    5 ripe peaches, pitted
    1 tablespoon honey
    1 teaspoon mixed berry marmalade
    2 tablespoons butter, cubed

    Preheat oven to 350 degrees F.  Arrange peaches in a baking pan.

    In a small bowl combine honey and marmalade.  Spread over each peach.  Then place a cube of butter in the center of each peach.

    Bake for 30 minutes or until golden and bubbly.

    Remove and let cool on a rack.

    For ice cream you will need:

    1 can sweetened, condensed milk
    A pinch of salt
    1/2 teaspoon vanilla
    1 cup heavy cream, whipped with a tablespoon of confectioners sugar

    In a stand mixer, combine condensed milk, salt and vanilla.

    *Fold* in the whipped heavy cream gently.  Transfer to a container and freeze until solid.

      What a delicious August treat! Great and simple recipe Tammy. I can just imagine that warm, sweet peach with ice-cream melting on top... heaven.
