    Strawberry Jam Salad Dressing

    How many days are left to this summer….I am not quite sure … I know the days are getting shorter…  I am racing against the hour glass to fill my dreams. . I am looking forward …yet I am not quite sure as to exactly what ….though I know I am… My dreams are sailing on the wings of the beautiful swans…I am waiting ….patiently….

    Ingredients:

    ½ cup strawberry jam
    ½ cup olive oil
    1 clove garlic
    ½ cup vinegar
    ½ tsp. salt
    ½ tsp. black pepper
    ¼ cup fresh basil
    2 tablespoons honey
    In a food processor combine all of the above ingredients and give a few good chops.
    Serve with your favorite greens.
    It is that simple….

      I never would have thought to put strawberry jam in a dressing! What an inspired idea. This dressing is perfect for summer. Enjoy these final summer days while you can! I'm savoring them, too.

      I'd never thought of jam in a dressing before but why not? Lovely idea. I've just been talking to someone who's looking forward to autumn but, so far, I'm still enjoying summer too much to think about autumn.
