Dried Apricot and Currant Rice

Listen for the song of the birds early in the morning.  Listen for the sounds of the crickets when the sun goes down.  We are not alone the Lord sings to us always if we will listen for the song.

Ingredients:
2 cups uncooked rice
For the chopping:
1 cups dried apricots - diced
½ cup dried currants
1 tsp. capers - chopped plus 1 tsp. caper juice
3 scallions - chopped
¼ cup fresh parsley - chopped
2 stalks celery - chopped
Dressing:
4 tbs. honey
Juice and zest of 1 lemon
¼ tsp. salt
¼ tsp. red pepper flakes
Prepare rice as directed.
In a bowl combine the chopped apricots, currants, capers scallions, fresh parsley and celery.
Combine the ingredients for the dressing in a small bowl; stir and add to the bowl with the chopped ingredients. 
Add the warm rice and toss: refrigerate until ready to use or serve immediately.
