    Marinated Boneless Pork Chops

    As the summer strolls along, there is so much to be thankful for.  The simple pleasure of a good cup of coffee comes to mind, a walk with your doggy, a simple delicious ice cream cone, a good classic old movie, sharing laughter with your kids.  These pleasures might seem small…but these are the ones that really count.  Thank Him each day for the small pleasures.
    Ingredients:
    6 boneless pork chops (about one inch thickness)
    For the Marinade:
    1 tsp. sugar
    1 tsp. vinegar
    ½ tsp. dried oregano
    ½ tsp. salt
    ½ tsp. ground black pepper
    2 tablespoons soy sauce
    1 tsp. sesame oil
    ½ tsp. garlic powder
    1 tsp. lime juice
    Place all of the ingredients for the marinade in a small bowl and mix.
    Place the pork chops in a container; add the marinade and make sure each pork chop in covered with the marinade.
    Place in the refrigerator for at least one hour or up to over night.
    Heat a large frying pan with 2 tablespoons of olive oil.  Add the pork chops; do not over crowd the pan.  Cook the pork chops about 4 minutes on each side or until the juices run clear.  Do not overcook ….the pork will be very dry.

      I have that thought just about every morning when Dudette comes in to cuddle with me for a bit. She'll slip her little hand in mine and we'll just lie there and talk and all is right in the world during those moments. God is so, so good.
