Summer is the time for quick, easy and delicious meals to share with the ones you love.

For the Crust:
2 ½ cups Special K Cereal - Oats and Honey (or your favorite cereal)
1 tablespoon butter
For the cheese cake:
8 oz. cream cheese
1 cup sour cream
1 egg
½ cup sugar
½ tsp. vanilla
1 tsp. lemon juice
½ cup cool whip
Frozen blueberries or your favorite frozen fruit
Preheat Oven 350 degrees:
Place in a food processor the butter and the cereal and process until crumbs form. Press this into a 9 x 2 inch tart pan.
In a mix-master place all of the ingredients for the cheese cake and mix until smooth and creamy.
Place the cheese batter into the prepared tart pan and place in the oven.
Bake 30 -35 minutes.
Serve with fruit and cream.
