4th of July Trifle

It was a perfect day full of laughter, family and a delicious spread!

Things rarely go as planned…but once in a while they exceed your expectations.

One of my favorite bloggers posted a recipe for a 4th of July Trifle.

Her baking never fails to surprise or delight me.
 
If you have been to her site, then you know what I mean…if not, then I strongly suggest you go and take a peak.
 
Rose Hawthorne of Kitchens Are Monkey Business featured a luscious trifle dessert that I knew had to make appearance at our 4th of July table.
 
I must admit though, the days leading up to the holiday were crazy and overwhelming.  I tried to get a head-start on this dessert the day before.  However, it was a race against time because I wanted this dessert ready for the grand finale of the evening.
 
So, I followed the recipe through for the Lemon Sponge Cake and Syrup and had that prepped the night before.  *Note* Let the cake sit overnight and soak up all that sweet juice.
 
However, I substituted the Lemon Lime Curd with a quick and easy homemade Strawberry Jam and just used whipped topping in between.  I’ll definitely give the full recipe a go soon.  But let me say.  That cake. Sooooo good!
 
Rosie told me that the Cake, Crème Anglaise and Curd can all be made the night before.
 
Time to get down to business now.
 
Lemon Sponge Cake and Syrup follow recipe here.
 
Strawberry Jam:
1 cup frozen strawberries
1/4 cup sugar
1/2 cup water
1 tablespoon Corstarch
 
Whipped Topping
Fresh Blueberries
 
In a small saucepan, combine all ingredients for strawberry jam over medium heat.  Be sure to stir often. The sauce should thicken into a jam in about 15 minutes.  Remove from stove top and let cool completely.
 
Assembly:
Follow Rosie on how she cubed her cake.
 
Now you can use a trifle bowl, but I felt the small jars were a festive touch.
 
I put down a layer of cake at the bottom and followed it up with the jam, another layer of cake, whipped topping and fresh blueberries.
 
Easy peasy lemon squeezy 😉
 
And voila! You have a 4th of July trifle…well, you can make it whenever you like.  No need to wait until next year 😉
 
Now for the grand finale…
 The day ended on a magical note.  I put Louis on my mp3 and watched the colored lights dazzle before my eyes against the midnight canvas.  “To see the Summer Sky is Poetry…”
 
I don’t quite remember a day as wonderful as this.  I hope yours was just as wonderful.
