I have learned that being creative with what the Lord gives us is key and a crucial part to being happy. Well, my daughter was in the mood for dessert and as I looked around there they were the bananas that were waiting to be eaten. I thought, I seem to make banana bread often this time I will try chocolate banana bread, "Why not?"
Ingredients:
3 bananas
4 tbs. butter
2 eggs
2 cups flour
1 cup sugar
½ cup brown sugar
1 tsp. baking powder
½ tsp. baking soda
10 oz. package brownie mix
Topping:
2-3 tbs. butter - cut into small pieces
½ cup crumbled chocolate cookies
Dash of cinnamon
Preheat Oven 350 degrees:
In a mix master combine the eggs, butter and sugars and mix until smooth.
In a separate bowl combine the flour, baking powder, baking soda and brownie mix. Slowly, add this to the mix master while on low.
In a small bowl combine the cookie crumbs, butter pieces and a dash of cinnamon. Crumble this with your fingers until small pieces are formed.
Butter two loaf pans and add the batter. Sprinkle the topping over the batter.
Bake for 45-50 minutes or until the toothpick test comes out clean.
